Pickles are having a very loud moment. What started as a familiar sandwich side has turned into a full-blown flavor obsession, showing up in chips, beer, marshmallows, spreadable cheese, and even an eye-catching wave of pickle-themed lifestyle items. According to the report, the trend has become so visible that it can feel hard to escape.

That enthusiasm is backed by numbers as well as novelty. FoodNavigator reported last November that sales of pickle-flavored products had climbed nearly 34%, reaching about $490 million more than the year before. Mark Luker of Grillo’s Pickles says the surge keeps growing, with each year seeming bigger than the last. Pickle author Karen Solomon points to social media as a major driver, while also noting that food companies often chase whatever flavor is hottest at the moment.

Pickles are finding a home in cocktails

The boom has also pushed pickles into drinks. At Hotel del Coronado in San Diego, pickle juice is used in a pickle margarita that has become one of the bar’s strongest sellers. In San Francisco, Trick Dog has introduced a dirty Manhattan made with rye whiskey, brine from house-made bread-and-butter pickles, and tamarind-infused vermouth. As one bartender explained, vinegar-based ingredients can open up a new set of flavors behind the bar.

Still, not every pickle experiment lands. The report points to viral videos suggesting frozen pickles belong in Sauvignon Blanc, but the results are not universally convincing. In one tasting described in the story, the combination came across as overly sour and heavy, with the pickle brine dulling the wine’s crisp finish. Even so, the broader pickle craze shows no sign of slowing, and the article suggests there is plenty of room to enjoy the trend in more natural pairings, especially in cocktails where the briny bite makes more sense.

For now, pickle fans can keep leaning into the moment with drinks, snacks, and other salty-sour creations. But the story also makes clear that while pickles may be everywhere, they still have limits.
